Even though I’m currently in the thick of life with a new baby, I decided to stick my head out of the trenches with these Easter Egg Cookie Bars.

Christmas mince pies are an institution in my family and something which we have all enjoyed eating together for years. My beloved Gramps, Roy, used to call them his “tranquilizers”, which we continue to laugh about years after he sadly left us. Admittedly I wasn’t always a fan, but much like Christmas cake, I’ve grown to appreciate these delicious little fruit-filled shortbread pies.
Well, I made it to Bali and it’s been almost two months. Crazy, right? Time flies when you’re making bold moves and changing your life, while at the same time wondering WTF you’re doing.
Please don’t for one second think that the fact that I’m publishing a recipe with the word “death” in its title is a coincidence. There’s death and chocolate cake, and then there’s Death by Chocolate Cake. This is about both.
This was by far the hardest thing I have ever written. Harder than what it’s like living in a foreign country, harder than my divorce, harder than navigating life alone after 9 years with the same person, and harder than the breakup which I was convinced would kill me because it hurt so much.
There are times when all I feel like eating is something simple, warm, comforting and sweet. This Coconut Quinoa Pudding delivers on all four of those requests. Much like rice pudding, all you really need…
Who (besides the non-meat eaters) doesn’t love a crispy piece of chicken? The good news here is that very little oil is required to get them crispy and before you even ask me, yes they can be cooked in an air-fryer.
This Smoked Salmon Trout Salad deserves a place on the summer salad menu, packed with fresh greens, seasonal asparagus, capers, a creamy egg and mayonnaise dressing and of course the star of the show – smoked salmon trout.
Cowgirl Cookies are chocolate chip cookies on steroids with the addition of salted pretzels, crisps and pecan nuts. If you’re into sweet and salty in one, you will love them as much as I do.
This one’s for all the hummus fans out there, especially the ones who eat their peas. Petit pois to be exact. I’ve made a lot of hummus in my life and am a firm believer that making it with dried chickpeas yields the creamiest, velvetiest and smoothest hummus of them all. The same method applies to my Petit Pois Hummus.
I turned 38 a couple of weeks ago. I’m not afraid of getting older, but what I do suffer from when it comes to my birthdays is reflecting on the past and I don’t particularly like them because of this. This year was no different, and despite putting on a very brave face I found myself spending the actual day of my birthday alone and dwelling on a few things.
Owwwwwww! These. Are. Ridiculous. Make them (especially if you vibe with the holy trinity of chocolate, hazelnuts and pretzels). That is all.
