It’s all downhill from here, folks. The festive season is almost here, can you feel it?
Celebrate the fact that it’s almost the end of the year with this Pineapple G&T made with Victoria Amber Gin, the third and final cocktail I made along with the Cucumber & Elderflower Collins and Strawberry Gin Fizz.
Pineapple Victoria G&T
30ml Victoria Amber Gin
20ml Pineapple Simple Syrup (see recipe below)
20ml Lemon Juice
Tonic Water
Fill a tumbler with ice and add the Victoria Amber Gin, Pineapple Simple Syrup and Lemon Juice. Stir to combine, top up with Tonic Water and serve.
Pineapple Simple Syrup
1 cup chopped pineapple
1/2 cup sugar
Juice of 1 lemon
1/2 cup water
- Add all the ingredients to a saucepan and bring to a gentle boil over medium heat.
- Remove the saucepan from the heat and allow it to cool for 30 minutes.
- Place a fine-mesh sieve over a bowl and pour syrup over to strain out solids, then store in an airtight container in the fridge.
